
What do you do when you are home alone on a weekend with no plans? You scavenge through the kitchen and gather all the ingredients you can and make a biryani out of it!
So, that is exactly what I did today and here’s my recipe for the same.
Ingredients:
- 2 cups biryani rice
- 1/2 cup peas
- 1/2 cup french beans
- 1/2 cup sweet corn kernels
- 1/2 cup carrots
- 1 cup soya nuggets
- 1 spoon salt
- 1 spoon jeera
- 1/2 spoon red chilli powder
- 1/2 spoon coriander powder
- 1/2 spoon turmeric
- 1 spoon biryani masala
- 1 onion
- 2 tomatoes
- 4 peeled garlic pods
- 2 green chillies
- 1 cup curd
For masala:
- Grind onion, tomatoes, garlic, green chillies with a cup of curd and make a fine paste
Procedure:
- Boil 2 cups of rice in 4 cups of water, add 1 spoon salt in it and cook and keep aside
- In a pan, add oil and heat
- Add jeera and as it crackles add the paste to it
- Add turmeric, red chilli powder, coriander powder and biryani masala
- Mix it all together and keep stirring till oil starts separating from the masala
- Once the masala is finely prepared, add all the vegetables and soya nuggets
- Let it cook for 10 minutes on simmered heat
- Once cooked, mix the pre-cooked rice and the masala
- Serve in a bowl with onion-cucumber raita and fried onions
